After the decadent indulgence of the French Brownies for TWD this past weekend (I made them twice), I really needed to post something healthy and nutritious.
Green bean salad is one of my family’s favourite salads. It is so versatile and can be put together in a flash. First, start with a plate of steamed green beans, add some fresh sliced tomatoes and whatever other vegetable suits your fancy. I have made it so many different ways by adding slices of boiled potatoes, thin slices of red onion or chopped green onions. It’s a great accompaniment to any meal (great with BBQs).
Make it a meal by adding a protein such as sliced hard boiled eggs or crumbled feta cheese. Season to taste with salt, pepper and oregano. Drizzle with extra virgin olive oil, sprinkle some chopped basilico on top and you’ve got a healthy meal salad.
Serve with bruschetta and a glass of vino and supper is ready!

Olive oil
Season to taste
