I haven’t really been a big fan of snow peas. They weren’t on the menu while I was growing up so it ws not a vegetable I was familiar with. Whenever I tried a recipe with snow peas as an ingredient, I always seemed to overcook them. No one likes limpy snow peas I have been told. So my family ate them raw in salads and I never gave cooking snow peas another thought – until today when I read Donna’s post on Spatulas, Corkscrews and Suitecases . I decided to try the Snow Peas with Garlic, Pine Nuts and Mint recipe and it turned out absolutely delicious! The snow peas were crunchy with the subtle flavour of garlic and pine nuts topped with fresh mint. Now I am looking forward to trying out the remaining 9 ways to use snow peas.
