The April 2009 challenge is hosted by Jenny from Jenny Bakes. She has chosen Abbey’s Infamous Cheesecake as the challenge.
When I was browsing through my Google Reader this morning, I noticed blog posts for the April Daring Baker’s challenge. What? Today? I just came back from a one week out-of- town trip last night and completely forgot that today was the posting day.
I am glad that Jenny of Jenny Bakes chose cheesecake to make as this month’s challenge because it gave me the opportunity to try another different cheesecake recipe. I was missing some of the recipe’s ingredients and by the time I managed to get all the ingredients it was supper time so that’s explains this late post.
I decided to halve the recipe and bake the cheesecake in four 4-inch spring form pans.
This recipe is easy to make. Apart from the crust, all the ingredients are mixed in one bowl.
The Crust:
For the crust I used crushed amaretti cookies instead of the graham cracker crumbs. I omitted the sugar because I found the cookies to be sweet enough.
The Filling:
I added lemon zest and Amaretto liquor to the filling.
The Topping:
I sprinkled toasted almond slices on top of the small cheesecakes and dusted them with icing sugar.
Since the mini cheesecakes were for dessert tonight, we shared two of them and although they was still a bit warm the taste was amazing. Can’t wait to eat the other two tomorrow. Who says I have to share?

I did the same thing! Waited until the very last minute to do the challenge and you are right, that is what is nice about cheesecakes. They taste complicated but are super easy to throw together.
The almond and sugar top is quite lovely.
