For this week’s Tuesdays with Dorie baking event, Heather of Sherry Trifle chose Fresh Ginger and Chocolate Gingerbread on page 212 of Dorie Greenspans’s baking book, Baking: From My Home to Yours.
This looked like an easy recipe to make and the combination of ginger and chocolate sounded delicious. I always have good intentions to make make the TWD recipes a few days before in case of baking disasters and to give me time to take some decent photos – it doesn’t happen. So here I was this morning hurrying to make the gingerbread so I would have enough light to take a few photos. Then I realized that I had no fresh ginger and my baking pan was 8×8 square. Well I guess I wouldn’t add the ginger and the pan I had would have to do.
The recipe was easy to follow and to make. I had to bake it an extra 10 minutes because of the change of the pan size. All was going well until I decided that the cake had cooled enough. When I turned it over half stayed in the pan and the other half on the plate. Okay, now what do I do? If it had been a sponge or pound cake, I would have made trifle. The only thing I thought of doing is putting the half on the plate back onto the half in the pan. Then I would frost the gingerbread in the pan. No one would know what happened except, well now you know too. By the time I took the photos it was getting late so that’s one of the best shots I managed to take..
I couldn’t wait to taste it any longer and did cut a small square to sample – it was delicious as I thought even without the fresh ginger.

Your frosting looks gorgeous! I had some issues with this cake too (including some of it sticking to the pan). Better luck next week, right? 🙂

I made mine in an 8″ pan too. Who has a 9″ pan laying around? I never did! I had to leave mine in an extra 15 minutes, and then the bottom started to brown too much.
Glad you liked it as much as we did. Your icing looks so shiny and chocolatey! John just took the rest of it up to the marina guys. They love me 😉
