For this week’s Tuesdays with Dorie baking Clara of I heart Food for Thought chose Chocolate-Chocolate Cupcakes on pages 215-217 from Dorie Greenspan’s book, Baking: From my Home to Yours.
Who could resist baking chocolate cupcakes? These cupcakes are made with cocoa powder and bittersweet chocolate and are also topped with a chocolate glaze. I thought that the addition of buttermilk would make them moist but they turned out a bit dry.
I usually adapt recipes to my family’s tastes but this time they thought the cupcakes were delicious just as they were. Since my daughters are all grown up now, we don’t celebrate Halloween any more (no more sewing Halloween costumes, Halloween parties, making countless Halloween loot bags or school or trick-or-treating). All to say that I decorated the cupcakes with whatever decorations I had on hand.
Next time I will pipe Nutella in the cupcakes before icing them. Perhaps the Nutella will help to make them a bit more moist.
