When I read that Stefany of Proceed with Caution chose these cookies found on page 73 of Dorie Greenspan’s book, Baking: From my Home to Yours, I was delighted. Although I have an intolerance to peanut butter, my family is a peanut butter loving kind of family and they know what kind of peanut butter they like; only the natural kind. So I took a chance and made the cookies with natural chunky peanut butter. I also divided the batter in half and added chocolate chips to one half (for the girls) and raisins to the other half (for, you know, the husband who thinks these cookies are healthy cookies because of the oatmeal and the raisins).

As I was mixing the batter, one of my daughters kept dipping a spoon in the mixing bowl to taste it and was disappointed that the batter was to be refrigerated for at least two hours and she couldn’t eat the cookies NOW! She did help to clean up – guess that helped to pass the time.
These cookies were scrumptious! Be sure to have plenty of milk on hand. I couldn’t resist taking a bite and I would have eaten the whole cookie if I could. They surely found a place in every one’s lunch bags this morning with a warning about peanut butter allergies. The response was ‘Don’t worry Mom, the cookies won’t last long enough to share’. Hmm…

I’m glad you got at least a taste, and that they were so popular with your family. They would work with other nut butters (some of the other bakers used tahini and cashew butter. I was thinking about almond butter for next time) – or are they on your ‘no’ list also?
