This week’s recipe, Jalapeño Cheddar Cornbread, from Barefoot Contessa at Home, page 154, was chosen by Sabrina and Alexander of Cooking with the Kids.
When I read some of the Barefoot Bloggers’ comments about jalapeno being connected to salmonella, I decided not take a chance and did not add them in the recipe. So I actually made a Cheddar Cornbread.
This recipe was quick and simple to put together. I thought it came out quite good with the combined flavour of cheddar cheese and scallions. My family on the other hand did not care for it much. Although they like cornmeal and cheddar cheese, they did not like them combined in a bread.

looks delicious! I used canned jalapenos b/c of the concern. Worked just fine!

oooohhhh…. this looks delightful. A couple weeks back I had bought some corn flour to make some cornbread and did not get around to it yet. After seeing your posting, I know exactly which recipe I am going to try! 🙂 Thanks for adding my blog to your blogroll, I have reciprocated in kind and I am glad to have found your blog as it is excellent!
